Crafted by Greg, part of his Florida Wood Series, this custom 7 inch Bur Oak fillet knife features a 3/4-inch-wide blade that offers a useful balance of flexibility, strength, and cutting performance. The extra inch of blade compared with the 6-inch version makes it a strong all-around choice for panfish through typical inshore and freshwater fish. Greg carefully heat-treats and tempers each blade to achieve the combination of hardness and flexibility needed for a working fillet knife. This process provides excellent edge retention while maintaining the controlled flexibility needed for precise filleting.

The full-tang construction provides strength and durability, while the contoured handle feels secure and comfortable in the hand. The Plateau design gives the knife clean, streamlined lines while maintaining the practical characteristics needed for a hardworking fillet knife.

Handle and Sheath

Greg crafted the handle from stabilized Florida Bur Oak harvested from a tree that was tearing up a neighbor’s property access in North Central Florida. The wood displays a striking combination of warm caramel and brown tones, dramatic dark grain lines, and natural figuring that makes this handle truly one of a kind.

Three brass pins secure the contoured Bur Oak scales to the full tang, while a brass lanyard tube at the butt of the handle is designed for attaching a float. If the knife slips from your hand and lands in the water, the float helps keep it on the surface rather than sending your new fillet knife straight to the bottom! 😄 The ergonomic handle provides a comfortable, secure grip and gives this fillet knife its distinctive Plateau character.
