The Red Cedar Plateau Boning Knife #405 combines the GreBec Knives Plateau design with U.S.-made 1095 high carbon steel. We designed the Plateau handle with locally sourced stabilized Red Cedar to comfortably fit users who find standard kitchen knife handles too short—a common complaint among those with smaller grips.
The blade is crafted from 3/32″ thick steel, delivering excellent edge retention and sharpness that’s easy to maintain. Measuring 5 1/2″ long and 5/8″ wide, the brushed straight-spine blade offers a subtle, controlled flex. This flex is more restrained than our full-flex fillet knives, yet sufficient to navigate contours, separate meat from bone, trim fat, or break down poultry and game without excessive bending or loss of control. The gently curved profile excels at clean deboning, lighter filleting tasks, and detailed prep work in the kitchen or field.
The handle is made from stabilized Florida Red Cedar as part of the GreBec Knives Florida Wood Series. It showcases beautiful natural definition, with warm reddish-brown hues and intricate swirling grain patterns that gained exceptional depth and figure during final sanding. The stabilization process enhances durability, moisture resistance, and grip comfort while preserving the wood’s organic character. Secured with brass pins and full-tang construction, the handle provides excellent balance in a compact 10 3/4″ overall length and a lightweight 4.80 oz total weight—ideal for extended use without fatigue.
