A Gift That Launched a Legacy
Our Florida Wood Series began with a friend’s heartfelt vision: custom Christmas knives for his children, made with wood from their home state. When the planned wood didn’t arrive, we turned to the sturdy Live Oak, native to Putnam County where his children were raised, even though they’ve since moved away. Greg added an electrochemically etched outline of Florida to each blade, creating keepsakes that celebrate their Florida roots and our deep connection to this land. That moment sparked our Florida Wood Series, a cornerstone of our craft.
Today, every knife in our Florida Wood Series carries Greg’s maker’s mark on one side of the blade and an etched outline of Florida on the other. The Florida emblem signifies that the handle was crafted from wood harvested here in the Sunshine State. Visitors to our booth often ask about the little Florida silhouette, giving Greg the chance to share the story behind each piece of wood and the tree it came from.
Every Piece of Wood Has a Story
We often remember exactly where a handle came from. It may have been a Live Oak removed after a hurricane, a cherished backyard tree gifted by a customer, or a Wild Plum that had finally succumbed to insects. We never harvest healthy trees. Greg cuts and stabilizes each piece himself, never knowing exactly what the finished handle will reveal. No two are ever alike, and that’s exactly why we love working with Florida wood.

Every Florida species has its own personality. From Live Oak and Pecan to Wild Plum, Southern Magnolia, Red Cedar, and Florida Black Olive, each offers distinctive color and grain. Some pieces reveal dramatic contrast, while others develop rich, naturally aged character. No stains or dyes are used—the beauty comes entirely from the wood itself.
Greg stabilizes all Florida woods. Stabilization improves their durability while preserving the natural colors and grain that make each handle unique. Greg enjoys sharing the story behind each piece of wood. Every GreBec knife is handcrafted in our Pomona Park workshop using USA-sourced 1095 high-carbon steel, American-made epoxy, and locally harvested Florida woods. Each Florida Series knife comes with two custom business cards featuring a photo of your blade and its specs, making it a cherished collectible.
