Designed for precision and balance, the South Florida Black Olive Wood Fillet Knife #409 is part of our Florida Wood Series. It is handcrafted for anglers who value control, flexibility, and a razor-sharp edge.

The 5 3/4″ brushed drop-point blade, forged from 1/16″ U.S.-made 1095 high carbon steel, flexes smoothly as you work, allowing clean, accurate cuts along bone and skin without sacrificing strength. After extensive research, Greg carefully heat-treats and tempers each blade to achieve the ideal balance of hardness and flexibility. The result is a thin, responsive blade that bends under pressure without feeling fragile—exactly what you want for filleting fish on the boat, at the dock, or in the kitchen.

At just 3.6 ounces, this 10 5/8″ overall-length knife feels light and nimble in hand, even during extended prep. Our signature Plateau handle design provides a comfortable, secure grip, finished with stabilized South Florida Black Olive Wood and three brass pins. The stabilized wood resists moisture and movement, making it well suited for wet conditions.
