Anglers Fillet Knife – Handcrafted Precision, Florida Style

Part of our Florida Wood Series, the Anglers Fillet Knife is a custom-order piece—handcrafted with a 6–8 week delivery window. It combines quality with regional character. Weighing just 4.2 ounces and measuring 10¾ inches overall, this knife is lightweight, balanced, and ideal for delicate slicing. Its 6-inch brushed straight-point blade, crafted from 1/16-inch 1095 high carbon steel, glides smoothly through fish for clean, precise cuts.

After extensive research, Greg carefully heat-treats and tempers each blade to strike the perfect balance of hardness and flexibility. This process ensures superior edge retention while allowing effortless maneuvering. As a result, the blade bends without breaking during tough filleting jobs. Built with a full tang for durability, the knife feels secure in hand—even when wet. The stabilized handle, accented with three brass pins, offers a comfortable, sure grip. Meanwhile, the ¾-inch blade width provides the right mix of flexibility and strength for all an angler’s filleting needs.

Choose from these Florida woods—each harvested and stabilized by Greg for sustainability and natural beauty:

  • Bur Oak: Renowned for rugged durability and intricate, swirling grain patterns. This tough hardwood adds earthy charm and timeless strength, echoing the resilience of Florida’s ancient landscapes.

  • Live Oak: Iconic for its exceptional density—twice that of common oak—this Southern favorite offers a rich patina and unyielding toughness. It’s ideal for a grip that stands up to life on the water.

  • Pecan: With its fine, even texture and subtle figuring, this dense hardwood delivers a smooth, comfortable hold. It blends classic warmth with everyday reliability.

If you’re interested in other Florida woods that may be available when you place your order, contact Greg to discuss your options.

Why High Carbon Steel?

High carbon steel does require a bit of care to prevent rust. However, it rewards you with a razor-sharp edge, precise control, and long-lasting performance. Because it’s lightweight and balanced, the Anglers Fillet Knife glides through fillets effortlessly. It’s a favorite among fishermen who value clean cuts, efficiency, and durability—whether dockside or in the kitchen.

Care & Maintenance

This blade is forged from high-carbon steel, not stainless. High-carbon steel will rust if left wet. To keep your knife performing beautifully, hand-wash it promptly after each use and dry completely. Then store it in a dry environment. For extra protection, apply a light coat of food-safe oil or our recommended Wiseman Axe & Knife Wax. You’ll find more details on our Care and Maintenance page.
