The Hearth Steak Knife Set draws on Greg’s 1850s Tiny Trade Knife design, lengthened for modern dining. Each knife blends Early American character with contemporary performance for a balanced, comfortable feel at the table. The blades are 3/32″ 1095 high-carbon steel with a clip point, heat-treated and given an antiqued, food-safe patina. At 4¼” long and 7/8″ wide (overall 8¾”, about 3.4 oz), they cut steak or roasts cleanly while staying light in hand. Because every knife is handmade, subtle variations in grain and finish make each one unique.
For the customizable handle, Greg selected stabilized Florida Bur Oak, a native hardwood known for its striking grain and natural strength. Stabilization draws resin deep into the wood fibers, enhancing durability and moisture resistance while highlighting the oak’s warm, earthy tones. These knives are also available with Magnolia for a smooth, lightweight feel with subtle grain elegance, or Red Maple for vibrant reddish tones and a firm, balanced grip. All woods available for this knife are Florida woods, harvested and stabilized by Greg. Whether you’re enjoying a steak at the table or tackling everyday kitchen prep, each knife in the Hearth set adapts to your needs—purchase individually as a utility knife or in sets of 4, 5, or 6 for complete table service.
Care & Maintenance
These blades are forged from high-carbon steel, not stainless. High-carbon steel will rust if left wet, but the antiqued patina provides protection that deepens with age. To keep the knives performing beautifully:
- Hand-wash promptly after each use and dry completely.
- Apply a light coat of food-safe oil or our recommended Wiseman Axe & Knife Wax for extra protection.
- Store the set in a dry environment.
