Florida Flavors Meet Historic Kitchen Tools

Greg and I took on a project that blends Florida flavors with our love of fine tools—canning Sand Pears using Historic Kitchen Knives. These Florida Sand Pears are crisp like an apple yet sweet like a pear. That combination makes them perfect for canning, pies, and Greg’s famous kuchen. And while the fruit is delicious, the real story is how our Historic Trade Knives, used as Kitchen Knives turned a big batch of pears into golden jars of goodness, ready for winter treats or gifting.

For this canning project, sand pears using historic kitchen knives, we put our knives to the test

Knives Used:

  • High Carbon Steel Paring Knife – Ideal for coring, until Greg took the Tiny Trade Knife back from me for more coring work!
  • Tiny 1850’s Trade Knife – Perfect for peeling and coring, with a comfortable classic handle and razor-sharp blade. I peeled a large bowl of pears without hand fatigue—a must for long prep sessions.
  • Small French Trade Knife – With its convex/scandi grind, Greg sliced through the apple-like texture effortlessly.

We cooked the pears in a light sugar syrup. Following that, we packed them into hot, sterilized jars, and processed them in a boiling water bath for 20 minutes. The kitchen filled with the warm, sweet aroma of pears and syrup. The result? Vibrant, golden jars ready for kuchen, gifting, or a midwinter treat.

Seeing those jars lined up—golden and glowing—was worth every minute of work. It’s the perfect example of how Sand Pear canning and kitchen knife craftsmanship come together.
